How to make the best Kir Royale
A Kir Royale should not be too sweet. We use dry sparkling wine and let the crème de cassis sweeten the drink slightly.
Look for a reasonably priced champagne or dry sparkling wine. Usually we spend 15 to 20 dollars. The most classic option is to use champagne, but an American sparkling wine can substitute if you’re having trouble finding something to match. A cava from Spain or a dry Prosecco from Italy are also good options.
Crème de Cassis is a liqueur made from blackcurrants. It’s quite sweet, but really very tasty. We just put a little in each glass – 2-3 teaspoons is enough. Substitutes for crème de cassis are crème de framboise (raspberry), chambord or crème de pêche (peach).
For a perfect Kir Royale, first add the liqueur (Crème de Cassis) and then fill the glass with champagne or sparkling wine. This way the drink will mix as you pour it.

Perfect Kir Royale recipe
To make them better, chill sparkling wine until well chilled. It’s also not a bad idea to put the flutes in the freezer a few minutes before making them.

3 to 4 tablespoons crème de cassis, raspberry crème or chambord
1 bottle (750 ml) sparkling or dry champagne, chilled
1/4 cup fresh raspberries, optional
