What is pico de gallo?

Pico de gallo is a Mexican salsa or sauce that, in its simplest form, combines ripe tomatoes, onions, jalapeño, cilantro, salt, and lime. According to Rick Bayless (an American chef who has dedicated his career to Mexican cuisine), this type of fresh tomato sauce is a popular condiment throughout Mexico.

In Texas, this fresh sauce is known as pico de gallo, but in Mexico it is known by other names such as: B. Mexican sauce, fresh sauce and raw sauce. If you are wondering what pico de gallo really means, it means “pico de gallo”. I’m not entirely sure why it’s called that, and after a little research there are several theories about it, but for now I’ll get to work 🙂

How it goes

Not only is this sauce delicious, but it’s also incredibly easy to make. I’ve shared the full pico de gallo recipe below, but here are some takeaways:

Cut tomatoes and onion into small pieces. For a sauce with fewer seeds and liquid at the bottom of the bowl, you can scoop out the seeds and excess liquid from the tomato (I usually skip this step unless I have a particularly rough tomato). To do this, cut the tomatoes in half and squeeze them slightly.

Then comes the chili, you can use jalapeño or serrano. For a hot sauce, leave the seeds and white membrane intact (this is where all the hotness of the chili lives). Remove seeds and membrane for a smooth sauce. I like to cut peppers so small that I never bite into a large piece.

Coriander is next. Cut coriander into large pieces. I really like cilantro in my sauce, but you can always remove the amount we recommend below if you’d like.

Finally add salt and acid. My favorite acid for pico de gallo is fresh lemon juice, but you can use apple cider vinegar if that’s all you have. Mix everything together and let the sauce steep for a few minutes (more details below).

My tips to prepare the best sauce

Let’s quickly go through my top tips for making the best dish with pico de gallo sauce:

Use good quality tomatoes. A ripe red tomato is best. It should be aromatic and smell like tomato. I know it sounds like a silly phrase, but too often I see tomatoes sold in stores that smell like nothing! Look for vine-ripened or heirloom tomatoes during the summer months when tomatoes are plentiful. In winter, when good quality tomatoes are harder to find, plum tomatoes or cherry tomatoes are your best bets.

Don’t skimp on onions and cilantro.. We added a good amount of onion and cilantro to our sauce. You should be able to see and taste them, especially the cilantro.

Use fresh lemon juice. There’s no place for bottled stuff here. The pico de gallo should taste fresh, a good splash of fresh lime juice helps. As I mentioned earlier, apple cider vinegar works as a substitute if you don’t have limes.

Let the sauce rest for a few minutes before serving. The salt brings out the flavor of the tomatoes and dulls the raw onion. Before serving, let the sauce sit for 10-20 minutes for better flavor. Since this is a fresh sauce, don’t let it sit for too long. In his book, Authentic Mexican, Rick Bayless says that a fresh salsa like pico de gallo is best for an hour or two, after which it loses some of the crunch and the onion flavor can start to take over. salsa You’re absolutely right, but I have to admit that I was still very happy when it was made the day before.

Homemade Pico de Gallo (Fresh Tomato Sauce)

Pico de Gallo is a fresh tomato sauce popular in Mexico. Use ripe tomatoes for this. Not all tomatoes are the same. When choosing tomatoes, look for tomatoes that have good color and firmness with some flexibility. If they don’t smell anything, leave them out. They should smell like a tomato, sweet and woody.

Makes 8 servings or about 3 cups

1 1/2 pounds tomatoes, chopped

1 medium onion, chopped (about 2/3 cup)

1 to 2 jalapeno or serrano peppers, finely chopped (seeds and membranes removed for a smoother sauce)

1/2 cup finely chopped fresh coriander leaves

juice of 1 lime

Salt to taste

    Place the tomatoes, onion, coriander, diced peppers and lime juice in a bowl. Season generously with salt – start with 1/2 teaspoon and work your way up from there. Reserve the sauce for 15 to 20 minutes.
