Do you need to blanch the green beans for this recipe?

Blanching green beans means cooking them in boiling water for a short time until they are flavorful, tender, and light green. Once soft, the beans are chilled in ice water to stop the cooking. Although blanching is a great way to prepare green beans for salads and other dishes, this easy wok recipe doesn’t require blanching.

Instead of blanching the beans, let’s simplify the cooking steps. The method isn’t much different than our sautéed zucchini, sautéed Brussels sprouts, sautéed cabbage, or this sautéed bok choy.

We like our beans to be light green with some bubbles on the outside and tender and flavorful in the middle.

Fry the beans in a large pan with a little oil and salt. Stir the beans every two minutes. We’re not looking for very tender beans at this point, just a few bubbles.

Pour in a small amount of liquid, such as water or broth, and cover. Cover and cook until beans are tender (about 2 minutes).

Uncover, then season with minced garlic, butter (regular or vegan), and other spices to taste. Stir for a minute or two, then serve!

Easy Sauteed Green Beans

1 teaspoon olive oil

1 pound green beans, stems broken

1/4 teaspoon fine sea salt

1/4 cup water or broth

Lemon wedges for serving

optional garlic butter

1 tablespoon butter or vegan butter

3 medium garlic cloves, chopped, about 1 tablespoon

1/2 teaspoon lemon zest

1/4 teaspoon freshly ground black pepper

    Heat the oil in a large skillet over medium-high heat, then add the green beans and 1/4 teaspoon salt.

    Cook until you start to see a few bubbles, about 5 minutes. Keep stirring while cooking to allow all of the beans to reach the bottom of the pan.

    Pour in the water (or broth), then cover the pan with a lid or, if the pan you’re using doesn’t have a lid, place a sheet of aluminum foil over the pan. Cook covered for 2 minutes.

    Cover the pan, reduce the heat to medium-low, and then continue cooking until the remaining liquid in the pan has evaporated. To serve, or if cooking the green beans in garlic butter, add butter, garlic, lemon zest, and black pepper. Cook, stir the garlic in the pan for a minute. To serve.
