There are some really good brands of store bought tortilla chips out there, but we couldn’t find anything better than homemade tortilla chips! Homemade tortilla chips are so easy to make and perfect for nachos or to serve with your favorite dips and sauces. Some of my favorites are the fresh pico de gallo, the guacamole, the creamy cheese sauce, this black bean and sweet onion sauce, and our roasted tomato sauce.

What tortillas to use?

Start with homemade corn tortillas or use good quality store-bought tortillas. For the best flavor, look for tortillas made with nixtamilized corn.

Nixtamal is dried corn that has been boiled and soaked in water with calcium hydroxide (also known as hydrated lime or lime). This age-old process gives the tortillas a fantastic flavor and makes the outer walls of the corn easier for us to digest (releasing the nutrients available in the corn). Not all store-bought tortillas use this method, so the flavor of the corn tortillas may vary. Look for the words “nixtamel” or “nixtamizado” on the packaging. You can also check the ingredient list on the packaging. It should be short and contain the words “cal” or “cal”.

How to make tortilla chips (French fries).

As I mentioned before, this is my favorite way to make tortillas. They are crisp, light and airy. You have to fry them in oil. Use a wide skillet and fill it with an inch or two of oil. You don’t need a glass full of oil.

If you use a smaller pot, you may find that preparing the chips in batches works better than emptying all the tortilla triangles at once. Each batch only takes a few minutes, even if you’re making multiple batches it won’t stay on the stove for long.

  1. Cut the corn tortillas into 6 triangles.
  2. Heat neutral cooking oil to 350°F on high.
  3. Place the tortilla triangles in the oil and bake until crisp and golden brown.
  4. Drain on kitchen paper and sprinkle with salt.

You can see in the photo that the tortilla triangles can be assembled in the oil. Even so, you’ll probably need to fry your fries in batches. I like to add just enough oil so they’re mostly in a single layer and not too crowded.

How to make tortilla chips in the oven

Baked tortilla chips aren’t as light and fluffy as fried ones, but they still taste great. A cooking spray can or spray bottle filled with oil is helpful, but you can always use a pastry brush or clean paper towel to lightly brush the tortilla chips with oil just before baking.

  1. Heat oven to 375°F.
  2. Cut the corn tortillas into 6 triangles and spray or brush lightly with oil.
  3. Arrange the triangles in a single layer on a baking sheet.
  4. Bake until crisp and golden.
  5. Sprinkle with salt.

Homemade tortilla chips are best eaten the same day, but if you need to store them longer, allow them to cool completely, then place in a resealable plastic bag or airtight container. You should stay like that for a day or two.

    Cover a plate with a paper towel or a clean kitchen towel.

    Place enough tortilla triangles in the hot oil so that they are mostly in a single layer but are not stacked on top of each other. Use a slotted spoon or kitchen tongs to gently press the tortillas into the oil, allowing the oil to coat all of them. Cook until potatoes are crisp and golden, about 2 minutes. Using a slotted spoon or tongs, place the fries on a plate lined with kitchen paper and season lightly with salt. Repeat with the remaining tortilla triangles.
