You can use apple cider (we did), wine, chicken broth, vegetable broth, or even beef broth. Boil this liquid until reduced by half, then add a tablespoon of butter.
You may already have some half-used spices in your pantry, here are some suggestions on how to use them in this recipe. Our recipe calls for three things: pork, a seasoning mix, and deglazing liquid for the pan sauce.

30 Minute Roast Pork Recipe
For the best, juiciest pork tenderloin, sear the pork on all sides in a skillet before placing in the oven. Which spice mixture you use is up to you; We like to use a mix of hot steak spices or fresh herbs like rosemary and thyme. We like to serve this pork with polenta or mashed potatoes.
Makes about 6 servings

2 (1 to 1 1/2 pounds) pork tenderloin (also called pork tenderloin)
Salt and freshly ground black pepper
2 tablespoons canola or vegetable oil
1-2 tablespoons of your choice of rub/seasoning mix, fresh or dried
3/4 cup wine, broth, apple cider, or a combination of these
1 tablespoon unsalted butter
- Prepare the pig
Preheat the oven to 425 degrees F. Trim each fillet of silvery skin (this can be tricky when cooking. Use a small, sharp knife and slide the blade down and out to loosen it). Pat the pork dry with a paper towel. Then season generously with salt and pepper.
Heat 1 tablespoon oil in a large cast-iron skillet or heavy-bottomed ovenproof skillet over medium-high heat. Add the pork tenderloins and cook, turning occasionally, until well browned, about 2 minutes per side. Spread the seasoning mixture or herbs on the pork.
Grill 10 to 15 minutes or until an internal thermometer inserted into the thickest part reads 145 to 150 degrees F.
Place pork on a large plate and cover with foil. Leave to rest for 10 minutes. While the pork is resting, return the pan to medium-high heat. Add apple cider and reduce by half. Add butter and drizzle over the pork.

- When is pork tenderloin ready? We cook our pork at 145 degrees F. This means the pork is just pink in the center, safe to eat and ultra juicy. You can cook pork tenderloin between 145°F and 160°F. Remember that keeping it close to 145°F yields the juiciest, most tender cut of meat.
