2 (1 to 1 1/2 pounds) pork tenderloin (also called pork tenderloin)

Salt and freshly ground black pepper

2 tablespoons canola or vegetable oil

1-2 tablespoons of your choice of rub/seasoning mix, fresh or dried

3/4 cup wine, broth, apple cider, or a combination of these

1 tablespoon unsalted butter

  • Prepare the pig
  • Preheat the oven to 425 degrees F. Trim each fillet of silvery skin (this can be tricky when cooking. Use a small, sharp knife and slide the blade down and out to loosen it). Pat the pork dry with a paper towel. Then season generously with salt and pepper.
